What are fatty acids

Fatty acids are long chains of carbon (C) atoms which typically range from 4 to over 20 carbons in length. The chains also contain hydrogen (H) and oxygen (O) atoms. There are several distinct categories of fatty acid including: saturated and unsaturated fatty acids, cis and trans fatty acids, and omega-3 and omega-6 fatty acids.
