Saturated and unsaturated fatty acids in milk

Concentration of saturated fatty acids (SFA) in milk fat is typically around 70%, with the remainder composed of mono-unsaturated fatty acids (MUFA; containing one double bond) and poly-unsaturated fatty acids (PUFA; containing two or more double bonds) (Figure 1).
